FSSAI licence for a pickle business.

A pickle business needs an FSSAI registration or licence before it sells, even from a home kitchen, and most start on Registration at ₹100 a year. The day you move from filling jars for neighbours to selling sealed, labelled packs, the pickle standard and the full labelling rules come with it.

A pickle maker with annual turnover up to ₹1.5 crore needs FSSAI Registration, at ₹100 a year. Between ₹1.5 crore and ₹50 crore it is a State Licence (₹5,000 a year); above ₹50 crore, Central (₹7,500 a year). What a pickle business has to get right.

Each point comes with the regulation, order or FSSAI document behind it. Where FSSAI hasn’t spelt something out, we say it’s our reading.

Pickles have a standard, with four types

Pickles are defined as fruits, vegetables or other edible plant material preserved in salt, acid, sugar or a combination. The standard recognises pickles in citrus juice or brine, in oil, in vinegar, and without medium, and every type needs a drained weight of at least 60%.

Each type has its own test

Pickle in brine needs at least 12% salt; in citrus juice, acidity of at least 1.2% as citric acid; in vinegar, at least 2% acetic acid. In an oil pickle the pieces must stay practically submerged in oil.

What a pickle must be free of

The standard requires pickles to be free from copper, mineral acid, alum and synthetic colours, and to show no sign of fermentation. Preservatives are allowed only as the additive regulations and Appendix A permit.

Pickle without medium is named by its fruit

A pickle without medium must be labelled as '(name of the fruit or vegetable) Pickle'. The name of the food is a mandatory label element, so the standard's wording is the safe choice.

Sealed packs bring the full label

A pre-packed jar needs every mandatory element: name, ingredients, nutrition, veg/non-veg mark, allergens, additives, name and address, FSSAI logo and number, net quantity, lot, date marking, MRP. Allergens must name the actual source — the cashew or almond in a dry-fruit pickle, not just 'nuts'.

Selling online changes the rules

Every seller on a marketplace needs their own licence or registration, and the listing must show it. Running your own online food store is an e-commerce food business, which the 2026 table places under a Central Licence at any turnover.

What goes wrong

Common mistakes with pickle business licences.

Selling homemade jars with no registration

A home kitchen is no exception. Selling without a licence or registration carries up to six months' imprisonment and a fine of up to ₹5 lakh under section 63. Registration costs ₹100 a year.

Printing a label that skips allergens

Dry-fruit and nut pickles carry a declarable allergen. A pack missing a required element is misbranded, with a penalty of up to ₹3 lakh, and the fix is a reprint.

Adding colour for a redder mango pickle

The pickle standard requires freedom from synthetic colours. No amount of testing fixes a recipe that fails the standard.

Opening a website store on a Registration

Marketplace selling works on your own registration. Your own online store is an e-commerce food business, which the 2026 table puts under Central at any turnover — check before launch.

FSSAI licence for pickle business: questions

Do I need FSSAI license for homemade pickles?

Yes. Selling pickles made at home is a food business, and it needs at least an FSSAI Registration before the first sale. For annual turnover up to ₹1.5 crore that is Form A, at ₹100 a year, and the 2026 amendment provides for instant registration on FoSCoS when the application is complete.

What is the FSSAI registration fee for a pickle business?

Registration costs ₹100 a year to FSSAI for turnover up to ₹1.5 crore. A State Licence is a flat ₹5,000 a year (₹1.5–50 crore) and a Central Licence ₹7,500 a year. There is no renewal fee, because licences no longer expire, but the annual fee must be paid. Our filing fee is ₹4,500 for Registration, plus GST.

How to get FSSAI license for pickle business?

Apply on FoSCoS under your own login. Choose your tier by turnover, select the manufacturer kind of business and pickles from the fruits and vegetables category, upload your ID, photograph, premises proof and product list, and pay the fee. For a State Licence you also need a layout plan, equipment list and FSMS plan.

Which FSSAI category is pickle?

Pickles sit in the fruits and vegetables food category (04) on FoSCoS, and the product standard is 2.3.43 in Chapter 2.3 of the Food Products Standards Regulations. That standard recognises four types — in citrus juice or brine, in oil, in vinegar, and without medium — so choose the variants that match what you make.

Yes. FSSAI's e-commerce guidance requires every seller on a platform to hold their own licence or registration, and the listing must display it — the platform's licence does not cover you. If you later build your own online store, that is an e-commerce food business, which the 2026 table places under a Central Licence.
